Recipe for ‘Powerballs’

Here’s the basis of a delicious recipe, which can be modified to suit your individual taste.  These little ‘no bake’ energy bites are a perfect healthy alternative snack!

Ingredients

  • 1 cup (dry) organic oats
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup  flaxseed
  • 1/3 cup honey
  • Optional:Tbsp each of chia seeds, pumpkin seeds, cashew nuts, dried chopped fruit such as apricots, dates or sultanas

Add seeds such as flax, sunflower and pumpkin for omega 3’s

Add nuts such as cashew and walnut and peanut butter or almond paste for healthy fats

Add dried fruit such as apricots, dates and sultanas for extra vitamins

Mix it all up in a bowl and separate into little balls, place an a small bun case, decorate with some dried fruit and chill in the fridge for up to 5 days.  We wrapped ours in cellophane and printed an Easter message for the bottom.
